When I make something new, I usually have all the ingredients on hand. I look for them in imported food stores or on Amazon and try to recreate the basic taste first. Then, from there, I change the seasonings, their mixtures, and the order of the steps to complete the recipe in my own way. I don’t mind having more seasonings, and I love the process of thinking about what to make with the extra spices.

Poke is one of those dishes that I believe can be made with authentic flavors using only so-called “unusual” seasonings. The only seasonings used are sesame oil, soy sauce, and other seasonings that Japanese people usually have on hand. So, I think it is a good idea to arrange leftover sashimi or carpaccio.

Now speaking of poke, it is a Hawaiian food. Japanese people love Hawaii, and I’m sure many of you have eaten it before. Poke is also very popular in the mainland U.S., and is sold in the form of poke bowls or salads (many places make their own bowls by choosing their favorite ingredients, like Subway for sandwiches).

The most popular sauces are spicy mayo (made with mayonnaise and sriracha sauce only) and wasabi, and the most popular toppings are crab cakes and tobiko.

Ingredients

  • Salmon 200g

  • 1/4 onion (or fresh onion if available)

  • 1 cucumber

  • 1 avocado (you don’t have to use avocado)

  • 1 green onion, for garnish

  • 1 tablespoon sesame oil

  • 1 tablespoon soy sauce

  • 1 teaspoon shichimi or chili pepper (or cayenne pepper, if available)

  • 1 teaspoon garlic powder

  • Dash of salt

  • A pinch of sesame seeds

  • Spicy Mayo
  • Make enough for your needs in a ratio of 1 Sriracha sauce to 2 mayonnaise.

Directions

  • Slice the onion (if you don’t like the spicy taste, soak in water for about 3 minutes), cut the salmon and avocado into cubes, and cut the cucumber into large slices. Add all the seasonings and mix well.
  • Adjust the spiciness and salt level with salt and shichimi pepper. Finally, sprinkle with a little green onion and sesame seeds.
  • Americans often eat this with spicy mayo. It is easy to make with mayonnaise and sriracha sauce, so if you want to recreate the taste of America, please try it.
