If you are thinking, “Even if I buy a bottle of Shaoxing wine, I won’t use it later,” it is worth having a bottle of Shaoxing wine in the house because you can add a little to Chinese dishes you usually make to give them an authentic taste. Cheap ones will suffice, by all means.

Shrimp is of course delicious, but the Shaoxing wine shrimp broth with the alcohol gone is also very tasty. You can drink it as it is, or if you like, I drink it with sake. haha

Ingredients

  • 8 shrimp in shell (black tiger, prawn, red shrimp, etc.)

  • 100 ml Shaoxing wine

  • 2 teaspoons grated ginger, shredded as needed

  • Pinch of salt

Directions

  • Prepare the shrimp. Put the shrimp in a bowl and cover them with potato starch, then add a little water and fry them. After that, insert a toothpick between the shells and remove the backs of the shrimp.
  • After preparation, place the shrimp in a deep heatproof dish and add rice wine, grated ginger, and salt. Leave to marinate for 20 minutes.
  • Place the shrimp in the prepared steamer with the whole dish and steam over medium heat for 7 minutes. If the alcohol in the Shaoxing wine has evaporated, the dish is done. If alcohol remains, steam for an additional 3 minutes.
  • Finish with shredded ginger and green chili pepper strips on top if desired.
