Super Flaky Chinese Chicken Wings

There is a famous Chinese restaurant in Tokyo called “Shanwei”.
Super Flaky Chinese Chicken Wings is the signature dish there. This recipe is a home version of that dish.
There is no reason why it can’t be delicious made with chicken wings, so I made an arrangement of my signature fried chicken wings and it turned out AMAZING.
The spices can be arranged as you wish. If you like it spicy, you can leave the chili seeds in, or if you like it sweet, you can add a little bit of sugar. If you can find them, try using fried shallots. If you don’t have them, substitute fried onions. If you don’t have any, you can substitute fried onions.
“Finger licking good” is exactly what this recipe is!
It is recommended as it goes well with beer as well as the Dragon Highball.
Super Flaky Chinese Chicken Wings

8 chicken wings
2 tablespoons flour
1 tablespoon katakuriko (potato starch)
1 cup cooking sake
★Fried Garlic 10g
★1 teaspoon black pepper
★2 dried chili peppers, de-seeded
★Fried Shallot(or Fried Onion) 10g
★1 teaspoon Chinese Five Spice Powder
★1 teaspoon Cumin Powder
★Pinch of salt
Directions
- Powder the ★ ingredients in a food processor or blender and mix in a bowl or large plastic bag.
- Prepare and fry the chicken wings. Please refer to this recipe.
- After frying, drain oil well and remove from heat. Place chicken wings in the bowl or plastic bag prepared in step (1) and toss well with seasoning. (If using a plastic bag, shake the bag like a balloon with the chicken wings in it to make it easier to mix the seasoning.)
- Serve on a plate.
- Adjust the seasonings to your liking. Sansho, hwasho, mustard seeds, coriander powder, white sesame seeds… the variations are endless!
